Human health is inextricably linked to soil health. The soil is the foundation on which much of our food is raised. Various qualities of the soil (like pH) determine which organisms will thrive in the soil and this in turn will determine which plants will grow well in the soil. The past decades of chemical farming have led to soil degradation and mineral depletion. We have eroded more the 50% of the topsoil in this country in the past 100 years. The agriculture industry regularly overlooks the fact that poor quality food equals human disease and suffering. We may think that we are getting cheap food, but we are going to pay for it many times over in medical bills, poor school performance, or environmental degradation.
On average, there has been a 63% decline of basic nutrients in today's produce as compared to produce raised in 1941. Corn grown today is totally deficient in iodine, chromium, lithium, vanadium, germanium, selenium, silicon, strontium and is 15-75% low in calcium, magnesium, potassium, sulphur, phosphorus, copper, iron, manganese, boron, and zinc. We require minerals for the basic processing and detoxifying of our bodies. Without, we become weak, toxic and are more vulnerable to illness.
Thoughtful soil nutritional management, which includes reminaralization of the soil, will provide the correct environment for beneficial microorganisms. The organisms will help grow crops that are "fully mineralized, healthy, healthful to eat, naturally good tasting and that do not spoil." (Anderson, A. Real Health, Real Medicine. p 202). These are the crops that will truly nourish human beings, providing adequate supplies of the minerals and nutrients that are life sustaining.
